Ik heb nog een snel recept voor lekkere muffins. Als je naast het gewoonlijke paasontbijt iets lekkers wilt serveren wat ook nog eens gezond is dan zijn deze muffins ideaal. Ze zijn suiker en glutenvrij en super lekker. En met de decoratie van eetbare bloemen is het een feestje op je paastafel. Het recept is heel gemakkelijk en het kost maar een halfuurtje tijd.
Nog een kort lijstje ingrediënten voor t gemak:
230 gram havermout
2 eieren
2 bananen ( in plakjes mengen in de keukenmachine)
1 theelepel bakpoeder
100 ml kokosmelk
1 theelepel vanille extract (biologisch)
een mespuntje zout
2 theelepels kaneel
+ extra een handje vol bosbessen
+ twee eetlepels agave siroop of honing (als je dit toevoegt gebruik je minder kokos melk)
muffin vormpjes van papier
muffin bakvorm voor 12 muffins
Mix alles door elkaar in de keukenmachine
Bak op 160 graden 25 minuten gaar, laat ze afkoelen op ene rooster en decoreer met eetbare bloemen
I have to share this easy healthy muffins recipe. These muffins are a nice addition to your easter breakfast. They are gluten free and sugar free. The decoration of eatable flowers is very nice on the easter breakfast table. This recipe will only cost you half an hour of your time.
A quick list of ingredients
230 grams of oats
2 eggs
2 bananas (peeled in small pieces)
1 teaspoon bakingsoda
100 ml coconut milk
1 teaspoon vanilla extract (organic)
a pinch of salt
2 teaspoons cinnamon
+ extra a hand full of blue berries
+ 2 tablespoons of agave syrop or honey (if you use this add less coconutmilk)
paper muffin liners
a muffin baking tray (for 12 muffins)
edible flowers for decoration
Mix it until smooth in your kitchen aid
Bake for 25 minutes on 160 degrees celcius let them cool down and decorate with edible flowers.

Lavender mint syrup recipe...

Ik ben gek op lavendel, de geur, de smaak en de plant. We hebben lavendel in de tuin staan en ik heb alle uitgebloeide bloemen er af geknipt. Het ruikt nu heerlijk maar je kan er ook iets lekkers van maken.
Als je de bloemetjes droogt kan je ze gebruiken in de thee gemengd met groene thee erg lekker. Maar ik heb er lavendel siroop van gemaakt. Aangezien we ook heel veel munt in de tuin hebben groeien leek de combinatie van munt en lavendel me wel erg lekker. De siroop is lekker over rood fruit of als limonade met ijsklontjes en een schijfje citroen erbij.
Wat heb je nodig:
- een glazen fles met goed afsluitbare dop (schoon)
- steelpan
- 200 ml water
- 100 gram rietsuiker (geeft een iets bruinere kleur maar is wel gezonder dan witte suiker)
- 50 gram lavendel bloemetjes
- 5 takjes verse munt
Hoe maak je de siroop:
Meng in de steelpan: suiker, water, lavendel en munt. Breng het geheel zachtjes aan de kook. Laat het een paar minuten heel zachtjes doorkoken en roer en steeds blijven roeren. Haal de pan van het vuur en laat alles een uurtje staan. Als het is afgekoeld zeef je het en giet je het voorzichtig in de schone fles en kan je het een paar maanden in de koelkast bewaren.

After cooling down poor the mixture though a sieve and into the bottle. You can keep the syrup refrigerated for a few months.

Summer cheesecake!

Ik heb onlangs een heerlijke cheescake gebakken. Nou bak ik wel vaker een taart en ook zeker een cheesecake, maar deze was wel heel erg lekker geworden. Ik kon het niet laten om het recept met jullie te delen. Het recept dat ik heb gebruikt is zonder toevoeging van fruit ook heerlijk maar ik wilde de taart toch net even een twist geven en dat is zeker gelukt.
Ingrediënten:
taart
600 gram naturel roomkaas
75 gram demi cremefresh
4 eieren
1 citroen (rasp)
1 limoen (rasp en sap)
100 gram poedersuiker
handje bosbessen
bodem
100 gram citroen jam
300 gram Digestives (heel fijn gehakt)
80 gram kokosolie
50 gram havermout
50 gram geraspte kokos
topping
75 gram demi cremefresh
1 eetlepel poedersuiker
rasp van 1 limoen
6 aardbeien
handje vol frambozen en bosbessen
Mix alle ingrediënten van de vulling door elkaar, behalve de bosbessen (deze voeg je toe als alles gemengd is tot een glad mengsel). Smelt ondertussen in een pannetje de kokosolie, dit gaat heel snel dus laat het niet te warm worden. Voeg in een kom de gehakte Digestives en de gesmolten kokosolie toe (je kan de koekjes in een keukenmachine fijn hakken maar ook door een zeef als rasp te gebruiken). Meng het geheel goed door elkaar en voeg dan de havermout en kokosrasp toe.
Op de bodem van een 26cm springvorm leg je bakpapier en vet ook de rand in met een beetje kokosolie. Doe het mengsel van koek in de springvorm en druk de bodem zachtjes aan. Begin in het midden en ga door tot je een randje kan maken. Zet het even in de koelkast om te laten opstijven.
Ondertussen kan ook de oven voorverwarmen op 130 graden, hetelucht stand. Zet de oven niet hoger want dan scheurt de taart heel snel.
Giet de roomkaasmix met bosbessen in de springvorm met koekbodem. Zodra de oven is voorverwarmt zet je de taart in de oven en bak deze 60 minuten. De taart is klaar wanneer deze er stevig uit ziet, als het midden nog blubberig verleng je de baktijd totdat alles er goed uit ziet.
Na het bakken laat je de taart langzaam afkoelen en daarna nog in de koelkast. Het is ook handig om de taart een dag van te voren te bakken. Vlak voor het serveren smeer je de topping (roomkaas met poedersuiker en limoenrasp) op de taart en decoreer je deze met fruit.
Geniet er van! Deze taart is heerlijk fris, een ideale zomer taart!

Mix in a large bowl all the ingredients for the filling except the blueberries (you add them later when the mixture is smooth). Meanwhile you can melt the coconut-oil in a small pan, it melts very fast so don't heat it too hard. Grind the Digestives in a food-processor until they are fine crumbs, add the coconut-oil, oats and grated coconut and blend until everything is mixed.
Take a 26cm diameter baking tin and line the bottom with bakingpaper, the sides can be rubbed with coconut-oil to prevent sticking. Add the Digestives mixture to the tin and spread out and press until firm starting in the middle. Try to work up to the sides and make a crust as high as possible. Put it in the fridge to cool down and get firm.
Pre heat the oven on 130 degrees Celsius. Add the cheesecake mixture to the crusted tin and bake for at least 60 minutes, if the cake looks solid it is done, if the centre is still "liquid" add more baking time until ready.
Let it cool down after baking and later keep it refrigerated. It is best to bake a day before serving. Add the sourcream toping at the last moment and decorate with fresh fruit.

Salad with green tea dressing..

Gisteren heb ik een heerlijke salade gemaakt van wat over gebleven groenten en mijn eerste oogst uit onze moestuin. Ik was al heel blij verrast toen ik zag dat ik een paar mooie radijsjes zag staan. Ze waren klaar om te eten en zagen er smakelijk uit. Het resultaat was goed, misschien is de salade nog wel lekkerder als je ook wat pittenmix toevoegd of zachte geitenkaas (maar dat is bijna overal lekker bij).
Mijn Instagram volgers hebben de foto's al gezien, maar nu het recept.
Recept voor twee
Salade:
sap van een halve citroen
1/2 rode uit
1 mei knolletje
1/2 komkommer
een handje vol radijsjes
een handje vol tasty tom tomaatjes of cherry tomaatjes
100 gram bimi maar broccoli kan ook
150 gram spinazie
(evt. wat geroosterde pittenmix)
Maak eerst alle groente goed schoon. Stoom de bimi en het knolletje 8 minuten. Ondertussen snijd je de ui fijn en giet je hier het citroensap over heen en een snuf zout. Laat even intrekken. Spoel de ui af met wat koud water en giet het af. Als de groenten gestoomd zijn kan je ze laten afkoelen in ijskoud water en dan drogen op een snijplank. Snij de tomaatjes en radijsjes in tweeën en doe dat ook met de bimi (in de lengte is mooier). Snijd het mei knolletje en komkommer in dunne plakjes. Doe de spinazie in de slakom en voeg alle ingrediënten toe, mix goed door elkaar en voeg wat dressing toe.

I found out that our garden already gave a few tasty radishes so I added them too. The results were great, it might be tastier if you also add some pumpkinseeds or pinenuts.
My Instagram followers might have seen the pictures already but here is the recipe.
Recipe for two
Salad:
juice of 1/2 lemon
1/2 red onion
1 turnip
1/2 cucumber
a hand full of radishes
a hand full of cherry tomatoes
100 grams of bimi (you can also use broccoli)
150 grams of spinach
(extra add some toasted pinenuts and pumpkinseeds)
First clean all the veggies and steam the bimi and turnip for 8 minutes. Cut the onion in very thin slices and toss it in the bowl with the lemon juice and a pinch of salt. Meanwhile you can cut the tomatoes and radishes in half (leave them on you choppingboard). Let the steamed veggies cool down in some cold water and dry on a chopping board. Rinse the onion with some water and put it in a strainer, then out back in the bowl. (the onion is now more tender in taste and structure). Cut the bimi in half and the turnip and cucumber in small slices. Mix it all together with the spinach and add the dressing.
Dressing: (made in advance, the green tea has to infuse a few weeks)
a large (Mason)jar
300 ml of olive oil
3 table spoons of green tea ( I used a green tea, lemon and ginger mix)
juice of two lemons
Add all the ingredients to the jar, close the lot and shake well. Let the flavors infuse in the oil. You only need to sprinkle a table spoon or two over the salad for a great taste.

Best falafel ever!

En ja hoor, het is echt heerlijk! Het is vegetarisch maar je hebt geen moment het gevoel dat je een stukje vlees mist. Dus alle credits gaan naar Jessica van "how sweet it is" die overigens nog meer heerlijke recepten op haar blog heeft staan.
Ik kon het natuurlijk niet laten om dit recept met jullie te delen. De ingrediënten zijn op basis van de Amerikaanse manier van meten maar dat kan je simpel omrekenen.
1 oz = ongeveer 28,5 gram
1 cup = ongeveer 236,5 milliliter (of gebruik een koffiekopje)
400 graden Fahrenheit = ongeveer 200 graden C
De dip is trouwens extra lekker als je het sap van een halve limoen toevoegt. Ik heb nl. limoen sap gebruikt in plaats van citroensap. Verder is het ook lekker om in het volkoren pita broodje ook wat gehalveerde cherry tomaatjes te doen en een beetje sla. En natuurlijk extra veel van die lekkere dip.

I will share it with you too.
I modified the recipe of the feta dip a little by adding the juice of half a lime to it. I love a bit a acidity and while eating this lovely meal I decided to add a few cherry tomatoes and some lettuce to my meal for the vitamins.
